Homemade Challah

This recipe creates moist, crusty challah that has accompanied many Shabbat meals and family parties. The dough can be braided into two challahs, or formed into small challah rolls.
6 cups flour
1/3 cup sugar
1 tablespoon salt
4 tablespoons butter, melted
2 packages active dry yeast
1 1/2 cups plain lowfat yogurt (optional, but excellent)
2 to 3 cups water
1 egg yolk, beaten with 1 teaspoon milk
sesame seeds or poppy seeds (optional)

Salmon with Pink Peppercorn Citrus Sauce

This recipe has lots of ingredients, is easy to make, and is a perfect example of the positive attributes of citrus fruit.
2 tsp sherry vinegar
2 tsp soy sauce
2 tsp pink peppercorns
2 tsp finely julienned ginger
1/4 tsp ground ginger
1/4 tsp salt
1/8 tsp celery seed
1/8 tsp hot red pepper sauce
1/4 cup olive oil
4 salmon fillets, 5-6 oz. each
Salt and freshly ground black pepper, to taste
2 Tbsp chiffonade of cilantro
1/2 medium lemon, sectioned and cut into medium dice
1/2 medium lime, sectioned and cut into medium dice
1 medium orange, sectioned and cut into medium dice
1 medium Texas ruby red grapefruit, sectioned and cut into medium dice

Breaded Chicken Schnitzel

Schnitzel is a very popular preparation served on Shabbat around the world. Its origins are Austrian, and it refers to any meat, pounded thin, coated with some breading, and then pan-fried.
1 pound boneless breast of chicken
¼ cup all-purpose flour (or matzah cake meal for Passover)
1 large egg
1 tablespoon water
1 cup panko breadcrumbs or matzah meal
1 teaspoon salt
½ teaspoon ground black pepper (20 grindings in a pepper mill)
½ teaspoon garlic powder
2–4 tablespoons extra virgin olive oil

Challah “Babka” Bread Pudding

This recipe is a twist on classic babka. Instead of being made with challah dough, it is made from the baked challah! 

One 1-pound challah (raisin or plain) loaf, preferably a few days old
8 ounces chocolate spread or chocolate-hazelnut spread
1 stick unsalted butter or margarine
¼ cup light brown sugar
4 eggs
1½ teaspoons vanilla
½ teaspoon cinnamon
2 cups milk
Additional butter for greasing dish
Topping:
3 Tablespoons unsalted butter, at room temperature or slightly softened in the microwave
½ cup flour
½ cup sugar
½ teaspoon vanilla
